Description
Chicken or vegetable broth is a clear, aromatic liquid with a golden (chicken) or light brown/yellow (vegetable) hue, featuring a distinct umami note, subtle saltiness, and a fresh, vegetable or slightly meaty aroma. The flavor can be mild yet deep, perfectly enhancing dishes without overpowering them. Nutritionally, broth is low in calories, a source of fluids and electrolytes; homemade bone broths contain collagen, glycine, and minerals that support joints and intestines, while vegetable broths provide vitamins and antioxidants. It is typically used as a base for soups, sauces, risottos, braising meat, cooking grains, poaching delicate products, or for flavor reduction. We store broth in an airtight container in the refrigerator for up to 3–4 days or freeze it in portions for up to 3 months; it should be cooled before refrigeration, brought to a boil before use, and salt should be added only at the end.
