Vegetable or chicken broth is a clear, golden liquid with a delicate, vegetable or moderately meaty aroma; vegetable broth tends to be lighter and fresher in taste, while chicken broth has fuller, slightly fatty notes and a richer umami aftertaste. The appearance depends on the clarity and additives — the thicker the stock, the more intense the color and aroma. Both broths are low in calories and hydrating, providing electrolytes, minerals (e.g., potassium, sodium), and trace amounts of protein; chicken broth may contain more amino acids and collagen beneficial for joints and intestines.
