Description
Cooked red beet has a sweet-earthy, mild flavor and a velvety, soft texture; its intense dark red color can stain other ingredients, which is worth considering when serving. It is a valuable source of fiber, folic acid, potassium, manganese, and vitamin C, as well as natural nitrates and betalains that support circulation, may lower blood pressure, and exhibit anti-inflammatory and antioxidant properties. Cooking slightly reduces the vitamin C content but retains most minerals and pigments with health benefits. Cooked beet pairs well in salads, borscht, as an addition to baked dishes, in hummus, marinades, smoothies, or as a colorful element in grain and meat dishes. Store it in an airtight container in the refrigerator for up to 3–4 days; for longer storage, freeze it after cutting and briefly blanching, avoiding prolonged soaking.
