Description
Saffron threads are the red, delicate stigmas of the crocus (Crocus sativus), with an intense floral-honey aroma and a subtle bitterness; when steeped, they color dishes a golden-yellow and add depth of flavor. They contain active compounds such as crocin, safranal, and picrocrocin, which exhibit antioxidant and anti-inflammatory properties and may support mood and cognitive functions when used in moderation; nutritionally, they are low in calories and provide trace amounts of minerals and vitamins. In the kitchen, saffron threads are suitable for risotto, paella, bouillabaisse, biryani, creamy sauces, desserts, and infusions.
