Description
Dark rum or bourbon are amber to deep brown spirits with a concentrated, malty-caramel aroma; rum often hints at molasses, spices, and dried fruits, while bourbon is characterized by vanilla, oak, and toffee with a touch of smokiness. They have a full, smooth taste with a long finish, making them appealing for both drinking and cooking. As distillates, they mainly provide calories from alcohol (about 7 kcal/g) and small amounts of aromatic compounds and trace minerals; health benefits are limited and associated with moderate consumption, with the important note that alcohol contains "empty" calories and should be used sparingly. In the kitchen, they are great for deglazing, marinades, sauces, desserts, flambé, and cocktails, enhancing flavors. Store upright, tightly sealed, in a cool, dark place away from light and heat; after opening, the flavor may slowly evolve, but refrigeration is not required.
