Brown sugar (e.g. muscovado)
Description
Brown sugar (e.g. muscovado) has an intense, moist aroma of caramel and molasses with noticeable notes of toffee and caramelized fruits; its appearance is dark brown, grainy, and slightly sticky. Nutritionally, it mainly consists of sucrose providing energy, containing trace amounts of minerals such as calcium, potassium, or iron due to the presence of molasses, which does not make it a "healthy" product — it should be regarded as a sweetener that requires moderation. In the kitchen, it works well where deep, caramel sweetness is desired: in cakes, cookies, gingerbreads, barbecue sauces, marinades, glazes, coffees, and cocktails, as well as to enhance savory dishes. It should be stored tightly in a cool, dry place; to prevent hardening, keep it in a closed container with a piece of bread or a slice of apple, and for longer storage, it can be frozen.
