Description
Wheat flour (for thickening) is a finely ground, cream-white powder with a neutral, slightly sweet taste and a delicate, silky texture that does not overpower the flavor of dishes. As a primarily carbohydrate product, it provides energy, a certain amount of protein (gluten), minimal fats, and trace amounts of B vitamins and minerals; it is advisable to use it in moderation and avoid it in cases of gluten intolerance, while the whole grain version increases fiber and nutrient content. In the kitchen, thickening flour works great in roux, sauces, soups, and stews, as an ingredient for breading or for binding ingredients in braised dishes, as well as a base for roux.
