Description

Powdered sugar (for dusting) is finely ground sugar with a silky, almost flour-like consistency and an intensely sweet taste that dissolves easily on the tongue. It usually contains a small amount of cornstarch or another anti-caking agent, which gives it a dry, loose structure ideal for decoration. As a product that is almost exclusively carbohydrate, it provides a quick source of energy, but it has no significant vitamin or mineral value; when consumed in excess, it contributes to excess calories and tooth decay, so moderate consumption is recommended. In the kitchen, powdered sugar has a wide range of uses for dusting cakes, cookies, pancakes, waffles, and fruit desserts, as well as for preparing glazes, icings, and lightly sweet decorative creams. It should be stored in an airtight container, in a dry and cool place, away from moisture and strong odors; if it clumps, simply sift it through a sieve to regain its fluffy consistency.
