Muscovado brown sugar
Description
Muscovado sugar is unrefined cane sugar with a moist, sticky texture and dark brown color, characterized by an intense caramel-molasses aroma with hints of toffee. Its flavor is deep and complex, distinctly sweeter than light sugars, which gives dishes a richer flavor profile. Nutritionally, it mainly consists of sucrose and provides calories comparable to other sugars, but contains trace amounts of minerals (iron, calcium, potassium, magnesium) and compounds from molasses; however, it is not a "healthy" product and should be consumed in moderation. Its advantage is a fuller taste and less processing. Muscovado works perfectly in baking, dark cookies, gingerbread, BBQ sauces, marinades, glazes, coffee, and cocktails, where it enhances the aromas of spices and caramelized notes. It should be stored in an airtight container in a cool, dry, and dark place to prevent drying out or clumping; if it hardens, it can be softened by adding a slice of apple or a piece of bread for a few hours or briefly heating it.
