Description
Brown sugar (optional) is unrefined or partially refined sugar with a light to dark brown color and a moist, clumpy texture, with a distinct caramel-molasses flavor that is sweet and slightly more intense than white sugar. Nutritionally, it mainly provides sucrose and calories, contains trace amounts of minerals and antioxidants present in molasses, but is not a significant source of vitamins; it should be used sparingly as a source of quick energy. In the kitchen, it pairs perfectly with baked goods, glazes, marinades, sauces, coffee and tea, as well as cocktails, where it adds depth of flavor and color; it can be used as a substitute for white sugar, keeping in mind its impact on the moisture and aroma of dishes. Store in an airtight container in a cool, dry place; if it hardens, softness can be restored with a slice of apple or a piece of bread temporarily placed in the container.
