Zucchini
Description
Zucchini is a delicate, cylindrical vegetable with smooth green skin and light, slightly moist flesh; its flavor is subtle, slightly sweet with a mild, fresh note, making it easy to combine with other ingredients. Nutritionally, it is low in calories and rich in water and fiber, providing vitamin C, several B vitamins, potassium, and antioxidants such as lutein and zeaxanthin, which support digestion, hydration, heart health, and eye health. In the kitchen, zucchini is versatile: raw in salads, grilled, baked, sautéed, as an addition to soups, stews, and ratatouille, stuffed, or turned into "zucchini noodles." To maintain freshness, store unwashed zucchinis in the refrigerator in the vegetable drawer or a perforated bag, using them within about a week; cut ones should be tightly wrapped and used within 2–3 days.
