Green beans
Description
Green beans are thin, long pods with an intense green color (there are also yellow and purple varieties), crunchy when raw and slightly sweet in taste, becoming soft when cooked while retaining a pleasant freshness. They are low in calories, rich in fiber, vitamins C, K, and folate, as well as minerals such as potassium and manganese; they also contain plant protein and antioxidants, which support digestion, stabilize blood sugar levels, and promote bone and cardiovascular health. In the kitchen, green beans are suitable for blanching, steaming, quick stir-frying in a wok, salads, soups, and casseroles; they pair well with garlic, lemon, almonds, butter or olive oil, as well as with fish, poultry, and grains. They should be stored unwashed in the refrigerator in a breathable container for 3–5 days; for longer storage, blanching and freezing are required, which preserves color and nutritional values.
