Pancetta
Description
Pancetta is an Italian cured pork belly, salted and seasoned with pepper and herbs, usually not smoked. It has an intense, meaty-salty flavor with a delicate sweetness and creamy fat texture; when sliced thinly, it showcases pink meat interspersed with white streaks of fat. Nutritionally, pancetta provides concentrated protein, B vitamins, and energy from fats, but it is also high in calories and sodium, so it should be consumed in moderation as part of a balanced diet. In the kitchen, it works well in sauces (carbonara, amatriciana), braised dishes, soups, salads, and as a crispy addition to vegetables or sandwiches. Store in a cool place (refrigerator 0–4°C), tightly wrapped or vacuum-sealed; once opened, use within a few days, and for longer storage, portion and freeze for up to about 2 months.
