Description
Bitter chocolate (min. 70% cocoa) is characterized by an intense, distinctly bitter-cocoa flavor and a deep, almost matte dark color. The pieces are hard, break cleanly, and when melted, release a rich dessert aroma with hints of fruit, nuts, or roasted cocoa, depending on the origin of the beans. It contains a high content of cocoa solids, less sugar, and more polyphenols than milk chocolate, providing antioxidants, magnesium, iron, and fiber; moderate consumption may support cardiovascular health, improve mood, and enhance cognitive functions. In the kitchen, it works well in baking, ganache, sauces, desserts, as an addition to fruits, coffee, or cheeses, and in savory dishes like mole. Store in a cool, dry, dark place (about 16–20°C) in an airtight package, away from strong odors; avoid moisture and sudden temperature changes that cause "bloom."
