Cocoa
Description
Cocoa is a fine, dark brown powder with an intense, bitter chocolate flavor and a characteristic aroma, which can have nutty or fruity notes depending on the origin and roasting level of the beans. Natural cocoa is more acidic and pronounced, while processed alkalized (Dutch) cocoa is milder and darker. Nutritionally, cocoa is rich in antioxidants (flavonoids), magnesium, iron, and fiber, which contribute to heart health, mood improvement, and inflammation control, provided it is consumed in moderation and unsweetened versions are chosen. In the kitchen, cocoa works perfectly in baked goods, hot drinks, smoothies, mousses, meat sauces, and marinades, as well as an addition to granola or yogurt. It should be stored in an airtight container in a cool, dry, and dark place, away from moisture and strong odors; an opened package is best used within a few to several months.
