Bitter cocoa
Description
Bitter cocoa is a finely ground powder with an intense, deep chocolate aroma and a dark brown color, characterized by a distinct, slightly earthy and bitter note, without any added sweetness. Its flavor is concentrated and aromatic, so only a small amount is needed to add depth to dishes. Nutritionally, bitter cocoa provides fiber, magnesium, iron, as well as polyphenols and flavonoids with antioxidant properties; when consumed in moderation, it can support cardiovascular health, mood, and cognitive functions due to the presence of bioactive substances. In the kitchen, it works well in baked goods, desserts, hot chocolate, smoothies, sauces (e.g., mole), and as a contrast to fruits, coffee, or chili. Store in an airtight container in a cool, dry, and dark place, away from moisture and strong odors; with proper storage, it retains freshness for a year or longer.
