Description
Split peas are small, flattened halves derived from yellow or green split peas, with a delicate, slightly sweet and nutty flavor and a uniform, light color. Once cooked, they become creamy and break apart, making them an excellent ingredient for creamy soups and purées. As a source of plant-based protein and fiber, they are filling and beneficial for regulating blood sugar levels and gut health; they also provide B vitamins, folic acid, iron, and potassium, and have a low fat content. In the kitchen, they work well in soups (e.g., traditional pea soup), thick stews, spreads, patties, and as a base for one-pot dishes; before cooking, they just need to be rinsed and rarely require long soaking. They should be stored in a dry, cool, and dark place in an airtight container, away from moisture and pests; cooked peas can be kept in the refrigerator for a few days or frozen for 2–3 months.
