Celery root
Description
Celery root is a bulb with a creamy, straw-colored skin and dense, whitish flesh that has a distinct, slightly spicy-nutty aroma with a subtle hint of celery. In the kitchen, it adds depth and flavor to dishes, pairs well with meat, fish, vegetables, and soups, and works wonderfully in purees, roasted, stewed, or as a base for broths and sauces, as well as in salads when grated. It is a good source of fiber, vitamin K, vitamin C, potassium, and folates, and its low calorie and fat content supports weight management and cardiovascular health. It is best stored in a cool, damp place, wrapped in foil in the refrigerator or in a container with damp paper, which extends its freshness for several weeks.
