Fresh forest mushrooms
Description
Fresh forest mushrooms have a distinct, earthy, and slightly nutty flavor with intense umami; their appearance can vary — caps ranging from beige to brown, meaty stems, and a delicate skin with a natural bloom. The texture can be firm or delicate depending on the species, and the aroma evokes the forest and damp leaves. Nutritionally, mushrooms are low in calories, rich in protein, fiber, B vitamins, and, in some species and after exposure to light, vitamin D; they also contain minerals such as potassium and selenium, as well as antioxidants that support immunity and metabolic health. They are great in soups, risottos, sauces, sautéed accompaniments to meats, pasta, and eggs, as well as on the grill or in fillings. Store them in the refrigerator in a breathable container (preferably paper), do not wash before storing, use within 2–4 days; for longer storage, blanch and freeze or dry.
