Description
Dried mushrooms have a concentrated, intense umami flavor with earthy and nutty notes; they resemble wrinkled, dark flakes or caps that regain a meaty texture and deeper aroma after soaking. They are low in calories, rich in fiber, plant protein, B vitamins, and minerals such as potassium, selenium, and zinc, as well as antioxidants (including ergothioneine); regular consumption can support immunity, cardiovascular health, and a feeling of fullness. In the kitchen, they enhance the flavors of soups, sauces, risottos, braised meat and vegetable dishes, and broths; it's worth saving the soaking water as a flavorful stock. Store them in an airtight container in a cool, dark, and dry place, avoid moisture, and after soaking, keep them in the refrigerator and use within a few days.
