Harissa (paste)
Description
Harissa is an aromatic paste from North Africa with an intense red color, a thick, slightly oily consistency, and a grainy texture; its flavor combines spicy pepper with hints of smokiness, garlic, cumin, and lemon, and the heat can be adjusted depending on the chili used. Nutritionally, it is low in calories, provides antioxidants and vitamins A and C from the peppers, and the presence of capsaicin supports metabolism and has anti-inflammatory effects; if it contains olive oil, it also adds healthy monounsaturated fats. Harissa works great as a marinade for meats and fish, an addition to stews, tagines, soups, sauces, dips, salads, and sandwiches, as well as an ingredient in mayonnaise or yogurt dips, giving dishes depth and spiciness. Store in an airtight jar in the refrigerator, possibly with a thin layer of oil on top, and use within a few weeks or freeze in portions for longer storage.
