Description
Medium-sized chicken eggs have a smooth, beige-white shell and a light, creamy yolk with a subtly buttery flavor; the egg white is transparent when cracked and becomes firm when cooked, providing a pleasant, versatile texture. They are a source of high-quality protein (about 6–7 g in one medium egg) and a moderate amount of calories (about 55–70 kcal), supplying vitamins A, D, E, several B vitamins, choline, and minerals such as iron and selenium; they also contain lutein and zeaxanthin, which are beneficial for the eyes. In the kitchen, they are suitable for hard and soft boiling, frying, baking, preparing emulsified sauces (mayonnaise, aioli), whipping egg whites, and as a binder in casseroles and patties. Store in a cool place, preferably in the refrigerator in the original carton, do not wash before storing, and use within a few weeks of the packing date.
