Strong espresso
Description
Strong espresso is an intense, concentrated brew with a deep, dark amber color and a thick, creamy crema on the surface. The flavor is dominated by a bitter, roasted note with noticeable acidity and chocolate-nutty accents that depend on the origin and roast level of the beans. As a beverage product, espresso provides virtually zero fat and sugars, very few calories, and a relatively high content of caffeine and antioxidants (e.g., chlorogenic acids), which, when consumed in moderation, can improve alertness, metabolism, and protect against oxidative stress, although excessive caffeine has side effects. In the kitchen, strong espresso enhances desserts, cakes, creams (e.g., tiramisu), ice creams, chocolate sauces, marinades for meats, and alcoholic and coffee cocktails. It is best to store the beans in an airtight, opaque container in a cool, dry place away from light and moisture; grind just before use. Prepared espresso can be kept in an airtight container in the refrigerator for 24–48 hours, but for the best freshness, use immediately.
