Natural soy yogurt
Description
Natural soy yogurt is a creamy, slightly tangy product with a velvety texture and light beige color; its flavor is milder than that of dairy yogurts, with a subtle nutty note characteristic of soy. Natural versions can be thick or more fluid depending on the thickening technology and the presence of probiotic cultures. Nutritionally, soy yogurt provides plant protein, unsaturated fats, and usually a small amount of carbohydrates; it is often fortified with calcium and vitamin D. The product is lactose-free and cholesterol-free, and fermentation with live cultures can support a healthy gut flora, making it a valuable alternative for those on a plant-based diet or with lactose intolerance. Natural soy yogurt works well as a base for smoothies, dips, sauces, dressings, marinades, and desserts, as well as an ingredient in baking to replace dairy yogurt. Store in the refrigerator at a temperature of about 2–6°C, use by the expiration date, and after opening, preferably within 5–7 days, avoiding contamination and vigorous stirring during long storage.
