Manchego cheese
Description
Manchego cheese comes from the Spanish region of La Mancha, made from sheep's milk, with a dense, creamy-yellow texture and a characteristic, often ribbed rind. Its flavor is buttery, nutty, and slightly spicy with hints of saltiness; younger varieties are milder, while older ones develop a more intense, complex aroma. Nutritionally, manchego provides high-quality protein, calcium, vitamins A and B12, and healthy fatty acids typical of sheep's milk, while also containing a fair amount of fat and calories, so it should be consumed in moderation. In the kitchen, it works wonderfully on cheese boards, alongside membrillo (quince paste), aged cured meats, and olives, and is great for salads, casseroles, and toasts, as well as for grating over pasta. To preserve its flavor and texture, store it in the refrigerator wrapped in parchment paper or in a cheese container, avoid freezing, and take it out a moment before serving to allow it to reach room temperature.
