Kohlrabi
Description
Kohlrabi is a bulbous variety of cabbage with a round shape, usually light green or purplish on the outside, with a crunchy, juicy flesh and a mildly sweet-peppery, slightly radish-like taste. It is low in calories, rich in fiber, vitamin C, potassium, and antioxidants, which support immunity, digestion, and maintaining healthy blood pressure, as well as promoting a longer feeling of fullness. In the kitchen, kohlrabi works great raw in salads, soups, and slaws; it can be cut into sticks for dips, sautéed, roasted, or baked with cheeses and spices; it pairs well with lemon, dill, butter, olive oil, and spicier seasonings. It is best stored unwashed in the refrigerator in the vegetable drawer; whole bulbs usually last up to two weeks, while cut pieces should be kept in an airtight container or in water for a few days.
