Squid (rings, raw)
Description
Squid (rings, raw) have a delicate, slightly sweet taste of the sea and a pleasantly firm texture that becomes soft and juicy after quick cooking; raw rings are milky white to slightly pearlescent and translucent. They are a source of lean protein with low fat and calorie content, rich in vitamin B12, selenium, phosphorus, iodine, and omega-3 fatty acids, which support neurological functions, metabolism, and cardiovascular health, and aid in muscle recovery. In the kitchen, squid works well when breaded and fried as classic "calamari," grilled, stewed in tomato sauces, added to salads, pasta, or Asian dishes, pairing well with lemon, garlic, olive oil, herbs, and chili peppers. They should be stored very chilled (on ice or in the refrigerator) and consumed within 1–2 days; for longer storage, it's best to freeze them in an airtight container after cleaning, thaw slowly in the refrigerator, and do not refreeze.
