Description
Cottage cheese is a fresh, grainy cheese with a delicate, slightly sour taste and a creamy-grainy texture, usually white with visible curds. It is a source of high biological value protein, calcium, phosphorus, and B vitamins; low-fat versions are available for those limiting calories. Due to its high protein content, it promotes a feeling of fullness and muscle recovery, and fermented varieties can positively affect gut microflora. In the kitchen, cottage cheese is used as a base for spreads, dips, and salads, as an addition to sandwiches, pancakes, and fruit desserts, and in combination with herbs and smoked salmon. It should be stored in the refrigerator in a sealed container at a temperature of 2–6°C and is best consumed within a few days of opening; freezing is not recommended as it alters the texture, and before serving, excess whey can be drained and gently mixed.
