Cardamom pods
Description
Cardamom pods are an aromatic spice with small, greenish or light yellow husks containing tiny, dark brown seeds. The flavor is intensely spicy, with citrus, eucalyptus, and slightly sweet notes, and the aroma is very lasting, which is why the pods are valued both as decoration and as a carrier of fragrance. Nutritionally, cardamom provides a small amount of calories, fiber, trace elements such as manganese, iron, and magnesium, as well as essential oils and antioxidants that support digestion, have anti-inflammatory properties, and promote fresh breath. In the kitchen, it pairs well with sweet baked goods, coffee and tea (e.g., chai), rice dishes, marinades, curries, and pickles, as well as desserts and fruit compositions. Store the pods in an airtight, dark, and cool place, preferably whole, to preserve the aroma; grind them just before use.
