Orange zest
Description
Orange zest has a vibrant orange color with an aromatic, oily skin and a thin layer of white pith that can be slightly bitter; the flavor is intensely citrusy, fresh, and aromatic due to essential oils, especially limonene. It contains small amounts of vitamin C, fiber, and bioactive compounds such as flavonoids (e.g., hesperidin) and antioxidants, which may support digestion, have anti-inflammatory effects, and positively influence the lipid profile with moderate consumption. In the kitchen, orange zest works well as a zest for baking, desserts, and cakes, as an ingredient in jams, candied, in marinades, sauces, and cocktails, and for flavoring teas and liqueurs; it pairs well with chocolate, vanilla, anise, poultry, and fish. Store it short-term in the refrigerator wrapped in plastic wrap or in an airtight container, and for longer storage, dry or freeze grated zest; candied zest keeps well in a cool, dry place.
