Beef bone
Description
Beef bone is an ingredient with a pronounced, meaty aroma and a deep, rich flavor, especially when it contains marrow. It is characterized by a thick, hard structure with a visible marrow cavity and remnants of meat; after long cooking, it releases a clear, golden broth rich in gelatin. In the kitchen, it is primarily used to prepare flavorful broths, consommes, and sauces, as well as for roasting marrow as an elegant addition to bread or one-pot dishes. Nutritionally, the bone provides collagen and gelatin, minerals such as calcium and phosphorus, as well as fat and fat-soluble vitamins contained in the marrow; amino acids like glycine and proline support joint health and digestion. It should be stored in a cool place at a temperature of up to 4°C for a maximum of 2–3 days or tightly wrapped in the freezer for up to 6 months, and thawed slowly in the refrigerator before use.
