Description

The boletus is a mushroom with a fleshy, often shiny cap in shades of brown, gray, or reddish, and a characteristic stem covered with darker "scales" that can be hairy or scaly. Its taste is delicate, slightly nutty with a subtle earthy note; when cooked, it develops a fuller aroma. Nutritionally, boletes are low in calories, rich in plant protein, fiber, B vitamins, and minerals such as potassium and selenium; they also contain ergosterol, which converts to vitamin D2 during drying. Regular consumption supports a feeling of fullness and provides antioxidants and trace elements important for immunity. In the kitchen, boletes are great in soups, creamy sauces, risottos, stews with meat, sautéed with butter, or pickled. They are best stored in the refrigerator in a paper bag or breathable container for 2–4 days; they can be dried or blanched and frozen for longer storage. Before preparation, remove dirt with a brush and always cook until tender.
