Xylitol (birch sugar)
Description
Xylitol (birch sugar) is a white, crystalline sweetener with a taste very similar to sucrose, accompanied by a slight, pleasant cooling sensation in the mouth. It has a sweetness comparable to table sugar, but does not caramelize as easily and is somewhat less soluble, which is worth considering in recipes. Nutritionally, it is a sugar alcohol providing about 2.4 kcal/g, has a low glycemic index, and is beneficial for oral health as it reduces the risk of cavities; however, in excess, it can cause gastrointestinal discomfort and is toxic to dogs. In the kitchen, it works well in baking, sweetening beverages, jams, creams, and chocolate, as well as in chewing gums. Store it in an airtight, dry container in a cool place, away from moisture and pets.
