Description

Agave syrup is a thick, syrupy sweetener with a clear, often amber or light beige color and a subtly floral-caramel flavor, milder than honey. Nutritionally, it mainly consists of simple sugars — primarily fructose — and calories from carbohydrates; it has a lower glycemic index than sucrose, which is why it is sometimes chosen as a sugar substitute, but due to its high fructose content, it should be used in moderation. In the kitchen, it pairs well with cold and hot drinks, muesli, smoothies, desserts, sauces, marinades, and baked goods, and it dissolves perfectly in cold liquids. Store in a tightly sealed bottle in a cool, dark place; at low temperatures, it may thicken — simply warm it gently in a water bath to restore its fluidity.
