Description
Canned or frozen corn has a sweet, delicate flavor and bright yellow, firm kernels with a shiny appearance; canned corn tends to be slightly softer and saltier, while frozen corn retains a fresher texture. It is a good source of complex carbohydrates, fiber, B vitamins (including folic acid), vitamin C, and antioxidants such as lutein and zeaxanthin, which support digestion, energy levels, and eye health. It also contains a moderate amount of protein with low fat content. Corn is suitable for salads, soups, stews, salsas, casseroles, tortillas, and as a standalone snack or side dish with rice and vegetables. Before use, it is advisable to drain and rinse canned corn to reduce salt content; frozen kernels can be added to dishes without thawing or lightly pre-cooked. Unopened cans should be stored in a cool, dry place until the expiration date; once opened, transfer the contents to an airtight container and consume within 2–3 days. Store frozen corn in the freezer at −18°C, best used within 8–12 months.
