Unfiltered apple cider vinegar
Description
Unfiltered apple cider vinegar has a golden-amber color with visible cloudiness and sediment at the bottom known as "the mother." The taste is distinctly sour with a subtle, fruity sweetness and an apple aroma, while the smell is sharp and slightly fermented. The texture can be uneven due to suspended microorganisms and polyphenols. Nutritionally, vinegar is low in calories, almost devoid of fat and protein, contains trace amounts of minerals (e.g., potassium), acetic acid, as well as phenolic compounds and the probiotic "mother," which may support digestion, microbiota balance, and glycemic control with moderate use. In the kitchen, it works well in dressings, marinades, preserving vegetables, deglazing, sauces, and for flavoring nuggets, pairing nicely with olive oil, honey, herbs, and mustard. It should be stored in a tightly sealed bottle in a cool, dark place; after opening, it can be stored in the refrigerator or a cool pantry.
