Lemon curd
Description
Lemon curd is a smooth, velvety mixture with an intense, fresh citrus aroma and a light cream-yellow color, combining the distinct acidity of lemon with a gentle sweetness and buttery consistency thanks to eggs and melted butter. It has a taste that is both refreshing and rich, slightly creamy, with a pronounced hint of lemon zest, making it a distinctive addition to desserts. Nutritionally, lemon curd provides vitamin C from lemon juice and zest, as well as protein from eggs, but it also has a significant sugar and fat content (mainly saturated fat from butter), so it is calorie-dense and should be consumed in moderation. It is perfect as a cream for tarts, a filling for cakes, pancakes, and scones, an addition to yogurt or ice cream, and also as a spread for bread. It can be stored in a tightly sealed jar in the refrigerator for about 1–2 weeks (homemade), while commercial versions last longer; it can also be frozen for 2–3 months.
