Small corn tortillas
Description
Small corn tortillas have a slightly sweet, mildly nutty flavor and a distinct grainy texture, usually in a natural yellow or cream color, with a diameter of about 8–12 cm; they are thin, flexible, but somewhat less elastic than wheat tortillas. Made from masa harina or corn flour, they mainly provide complex carbohydrates and fiber, contain small amounts of protein, fat, as well as B vitamins, magnesium, and potassium; as a gluten-free product, they are a good alternative for those with gluten intolerance and can support digestion and weight control with moderate consumption. In the kitchen, small tortillas are great for tacos, mini wraps, quesadillas, snacks with fish, meat, or vegetables, and for baking crispy as chips. It is best to store them in an airtight container at room temperature for a few days, in the refrigerator for 1–2 weeks, and for longer freshness, freeze them for 2–3 months, placing them with dividers to prevent sticking.
