Description
Semolina flour (or wheat flour type 450) is a light, slightly creamy flour with a delicate, neutral taste and a medium-grained, gritty texture that gives baked goods a pleasant, slightly crumbly consistency. Due to its moderate protein content, it creates less elastic but tender doughs and dumplings, resulting in a subtly crumbly effect in baked goods. Nutritionally, it is primarily a source of carbohydrates, contains a moderate amount of protein, small amounts of fat, as well as B vitamins and minerals, and in enriched versions, also iron. It serves as a quick source of energy and is a good ingredient for a balanced diet; however, individuals with gluten intolerance should avoid it. In the kitchen, it works well for sponge cakes, cookies, shortcrust bases, dumplings, pierogi, and some types of bread, where it is valued for its crumbly texture and lightness in baked goods. Store in a dry, cool place in an airtight container, away from odors and moisture; for longer freshness, it can be kept in the refrigerator or freezer, and the standard shelf life in dry conditions is about 6–12 months.
