Description
A mixture of forest mushrooms (frozen or fresh) is characterized by a distinct earthy-umami flavor with nutty notes and a delicate, meaty texture; visually, it is a composition of caps and stems in shades of brown, beige, and white, often with subtle carvings and a variety of shapes. Mushrooms are low in calories, rich in fiber and plant protein, and a source of B vitamins, vitamin D (especially after exposure to light), and minerals such as potassium, selenium, and iron, as well as containing antioxidants and beta-glucans that support the immune system and gut health. In the kitchen, they greatly enhance soups, risottos, sauces, casseroles, pasta, and meat or vegetable dishes; they can be sautéed, stewed, baked, or added at the end of cooking to preserve their aroma. Store fresh mushrooms in the refrigerator in a paper bag for 3–7 days, avoiding airtight containers, and frozen ones are best kept in airtight bags after blanching or quick freezing, lasting up to 6–12 months; before preparation, drain excess water or sauté without thawing for a more intense flavor.
