Description
Wheat flour type 450 is a very finely milled, light, almost white powder with a mild, neutral taste and a delicate grain aroma. It mainly contains carbohydrates and protein (gluten), has a low fiber and mineral content (ash ~0.45%), which translates to easy digestibility and excellent leavening ability. For those without gluten intolerance, it is friendly to the digestive system, but it does not replace the nutritional value of whole grain flours. Type 450 works great in delicate baked goods such as sponge cakes, cakes, cookies, pancakes, as well as for sauces and breading — it provides a soft, fluffy texture. Store in an airtight container in a cool, dry place away from light and odors; in a humid climate, it is advisable to keep it in the refrigerator or freezer for longer freshness.
