Description
Rice flour is a fine, white or slightly creamy powder with a mild, slightly sweet, neutral flavor and a delicate floury texture that gives dishes smoothness without overpowering the aroma. Depending on the type (white or brown), it mainly contains carbohydrates, small amounts of protein and fat, and trace amounts of B vitamins and minerals; the whole grain version provides more fiber and nutrients. Rice flour is naturally gluten-free and easy to digest, making it recommended for people with gluten intolerance and as a lighter alternative in the diet. Culinarily, it works well as a thickener for sauces, in gluten-free baking, in coatings, rice pancakes, cakes, and Asian noodles, as well as an ingredient in flour blends. It should be stored in an airtight container in a cool, dry place; the brown version is best kept in the refrigerator or freezer to prevent rancidity.
