Description
Parsley has a fresh, slightly peppery-herbaceous flavor and an intense green color with small, crinkled leaves, making it an attractive addition to a dish, although it is optional. As a garnish, it adds aroma and freshness to dishes without overpowering their main character. Nutritionally, parsley is rich in vitamins A, C, and K, folic acid, iron, and antioxidants that support immunity, bone health, and metabolism, and have anti-inflammatory properties. Culinary uses include sprinkling on soups, salads, fish and meat dishes, sauces, and potatoes, as well as being an addition to marinades and dips. It is best stored in the refrigerator, slightly damp, wrapped in a paper towel and placed in a bag or standing in a glass of water; rinse and finely chop before use. Chopped parsley can also be frozen in oil for longer storage.
