Acorn flour
Description
Acorn flour has a warm, nutty aroma and a light brown to amber color; after proper soaking, it is free of the bitterness of tannins and has a slightly sweet, earthy taste. It is a rich source of complex carbohydrates, fiber, and healthy fats, and it also contains protein and minerals such as potassium, magnesium, iron, and small amounts of B vitamins, which support energy, digestion, and mineralization of the body. In the kitchen, acorn flour is great for bread, pancakes, cookies, thickening sauces, and as an addition to gluten-free mixes, adding depth of flavor and texture. The product should be stored in an airtight container in a cool, dry place, and for longer-lasting freshness, it is best kept in the refrigerator or freezer; when processing acorns yourself, they should be properly soaked and rinsed to remove tannins beforehand.
