Description
Starchy potatoes have a dry, slightly floury, crumbly texture and light flesh, often with a rough skin; when cooked, they become fluffy and tender, with a mild, slightly sweet flavor. They are rich in starch, providing complex carbohydrates, vitamin C and B6, and potassium; they contain little fat, and when consumed with the skin, also fiber and minerals, making them a nutritious source of energy and support for the nervous system and electrolyte balance. Culinary uses for starchy potatoes include mashed potatoes, crushed potatoes, gnocchi, dumplings, and baked or well-cooked fries, where their fluffy texture is valued; however, they are not suitable for salads as they fall apart. Store them in a dry, cool, and well-ventilated place, away from light and onions, ideally at a temperature of around 4–10°C; avoid the refrigerator to prevent the conversion of starch into sugars and deterioration of flavor.
