Wildflower honey or maple syrup
Description
Wildflower honey has a golden, sometimes amber color, a sweet, floral aroma, and a subtly varied sweetness depending on the season, while maple syrup is characterized by a darker, ruby-brown color and a more caramelized, smoky, complex flavor. Both products add depth to dishes — they work great as a topping for pancakes, an ingredient in marinades and glazes, a sweetener for yogurts, oatmeal, dressings, as well as in baking and cocktails, where they enhance the aromas of spices and nuts. Nutritionally, both are concentrated sources of simple sugars and calories, containing small amounts of minerals and antioxidants (honey also has antibacterial properties), so it is advisable to use them in moderation. Honey should be stored in a sealed jar at room temperature, avoiding moisture; crystallization can be restored by gently warming it in a water bath. Maple syrup should be kept in the refrigerator after opening or frozen for longer shelf life, protecting it from light and high temperatures.
