Description
Vegetable scraps are a colorful, heterogeneous mix of peels, ends, and small pieces with concentrated, often bold flavors — from the sweet notes of carrots to the onion aroma and slightly bitter accents of green parts. The appearance can be rustic: various shapes and colors that add texture and depth of flavor to dishes. Nutritionally, these scraps are a source of fiber, vitamins (especially A, C, and B vitamins), minerals, and numerous phytochemicals with antioxidant properties, all while being low in calories. In the kitchen, they are great for broths and stocks, cream soups, stir-fries, fillings, pesto, or as a base for sauces — imparting intensity and economy to dishes. They should be stored chilled in an airtight container, used within 1–2 days, or portioned for freezing for broths (up to 3 months), always removing spoiled parts and washing thoroughly before use.
