Young nettle
Description
Young nettle has delicate, light green leaves with finely serrated edges and a soft, almost velvety texture after blanching. It tastes similar to spinach with a distinct, fresh note of grassy sweetness and a light, nutty depth. It is rich in vitamins A, C, and K, as well as minerals such as iron and calcium, providing antioxidants and fiber, which support immunity, circulation, and digestion. In the kitchen, young nettle is a great substitute for spinach: it can be added to soups, pesto, risottos, omelets, pasta, smoothies, and teas, as well as to fillings for dumplings or tarts. Before use, it should be briefly blanched or processed to neutralize the stinging hairs. It can be stored chilled in the refrigerator wrapped in a damp towel in a perforated container for 3–4 days, and can be frozen after blanching or dried for tea for longer storage.
