English mustard
Description
English mustard is an intense, sharp mustard with a light yellow to golden-brown color, often smooth or slightly grainy in texture. The flavor is based on a spicy, pungent heat (isothiocyanates) that provides a quick, warming sensation and a brief burning on the tongue, without lasting bitterness. Nutritionally, it is low in calories and low in fat, providing trace amounts of protein, fiber, and minerals, as well as sulfur compounds and antioxidants from mustard seeds, which support digestion and have antibacterial properties; those with a mustard allergy should avoid it. In the kitchen, it works well with meats (especially beef), sausages, sandwiches, marinades, sauces, and dressings, as well as an ingredient in glazes and dips when we want to add heat and flavor. Store in an airtight jar, in a cool, dark place before opening; after opening, it is best kept in the refrigerator, tightly closed, and used within a few months, stirring in case of separation.
