Description

Rice vinegar has a delicate, slightly sweet and moderately sour taste, milder than distilled vinegar; it comes in several varieties ranging from clear, almost colorless to light yellow or amber in the case of darker, unrefined types. From a nutritional standpoint, it is low in calories, contains virtually no fat or protein, provides trace amounts of minerals and amino acids, and the acetic acid it contains may aid digestion and positively influence glycemic control with moderate consumption. In the kitchen, rice vinegar pairs wonderfully with sushi, sauces, dressings, marinades, and light salads, softening fatty notes and balancing sweet elements.
